Yesterday I was at the Price Chopper and noticed they are carrying a line of "It's a Utica Thing!" sauces. A little pricey at $5.99 a jar. I picked up the chicken riggie sauce, a package of cutlets, bow tie pasta and a small container of ricotta. I already had mozzarella in the fridge. Some time this week I'll put it together and bake. Dredge chicken cutlets in flour, quick pan fry in a little oil then shred chicken in food chopper. Mix cooked macaroni with ricotta and shredded chicken. Mix in sauce. Transfer to 9x13 baking pan,top with mozzarella, bake covered at 350 for 40 minutes. My oven runs high, you may need 5-10 more minutes.
I really needed a jar and a half or even 2 jars for a full pound of pasta and all of that cheese. Obviously this would be a lot healthier without the cheese. I was thinking that the sauce wasn't going to taste anything like my son in laws mothers' chicken riggies. I was wrong. It was perfect. Originally I said I thought the sauce was pricey. Relative to the cost of the rest of the ingredients to make a large pan...the sauce makes the dish...I'll definitely pay the $14 for 2 jars. Perfect for leftover cooked chicken.
